The Edison at Disney Springs: Cool Vibes, Uneven Execution (An Honest Review)

Every Monday night, my roommates and I do what we call our "Family" Dinner. We pick a different restaurant each week and all pile in together. It's one of my favorite traditions, and it's how I end up trying a lot of places I'd otherwise skip.

This week's pick: The Edison in Disney Springs.

Did it live up to the hype? Grab a seat and let's talk about it.

The Atmosphere: Seriously Cool

Let me start with what they got right, because they got a lot right.

The atmosphere is amazing. It's steampunk-ish and industrial, and just really cool. The second you walk in the door, you're greeted by a huge clock with its inner workings on full display. It's a great first impression.

There are two levels with plenty of seating, including both high-top bar tables and regular dining tables, so whether you're after a casual night or a sit-down meal, there's a spot for you. Atmosphere? Nailed it.

The Cocktails: Great Intentions, Shaky Execution

If you know me, you know I live for a well-balanced, interesting cocktail. The Edison's cocktail menu looked great, with some genuinely interesting options.

What I ordered: The Edison ($19)

It's the namesake cocktail, and it's made with bourbon, so it was a no-brainer for me. Woodford Reserve, Belle de Brillet pear brandy, lemon juice, and honey cordial.

Sounds good, right? Well... kinda.

I couldn't really taste the pear brandy, and it came across like a run-of-the-mill whiskey sour. Nothing special. Not a great start.

My roommate's pick: the seasonal Halloween cocktail

I can't for the life of me remember the exact name, and it isn't on their online menu. It was tequila-based, similar to a margarita, and came with a small syringe of beet juice that you add yourself. Great presentation! But he wasn't loving the flavor. It was a little too tart for his taste.

My take: There's definitely thought and intention behind these drinks. The execution just isn't there yet.

The Food

To Start: Cornbread and Biscuit Basket ($14)

Corn-shaped cornbread and buttermilk biscuits, served with seasonal jam and Whistle Pig barrel-aged butter.

Cornbread and Biscuit Basket

OMG, that butter! I wanted to take it home. You get a slight hint from the barrel it was aged in, along with a touch of maple. Incredible.

The Churrasco

The cornbread was moist, slightly sweet, and delicious. The biscuits were good too, warm, with a slight crisp crust and a soft inside. Not the best I've ever had, but that butter made them even better.

My Entrée: The Churrasco ($25)

Pressed ciabatta with NY strip roast beef, arugula, caramelized onion, cherry tomatoes, and chimichurri, served with Burbank Fries.

The sandwich was good. The ingredients blended really well together, and I was happy with it. I just think it should've been a little cheaper.

The fries, though? Okay. If you're going to give your fries a special name, please make them more than standard frozen fries. Throw your own seasoning on them or something. Very disappointed.

Roommate 1: The PB, B&B Electric Co. ($23)

Butter-griddled sourdough, peanut butter, smoky bacon, and banana, served with Burbank Fries.

An interesting combo! He enjoyed it. It was slightly sweet from the bananas, with a nice hint of smoke and salt from the bacon. He agreed with me about the fries, and he wouldn't come back for it again.

Roommate 2: The Edison Burger ($25.50)

Signature burger blend, sharp cheddar, smoked bacon, pickles, lettuce, tomato, and Edison sauce, served with Burbank Fries.

Compared to a typical burger, she wasn't a fan of the burger blend and said it tasted a little strange. I tried a small piece, and it tasted like a blend of sirloin and something else, so not your usual ground beef. She liked it, but she wasn't wowed.

The Service

Our server was great. She knew the menu well and gave her honest opinion when we asked what she'd recommend. She was attentive without being overbearing, which is exactly the balance you want.

Would I Go Again?

Probably not.

the PB, B&B Electric Co.

It just didn't excite me, especially for the price. There are so many great restaurants in Orlando, and a few in Disney Springs, that I wouldn't spend the time going back.

Hey, you win some, you lose some.

The Quick Take

  • Atmosphere: Steampunk, industrial, and very cool, with a huge working clock at the entrance

  • Best bite: The Whistle Pig barrel-aged butter with the cornbread and biscuit basket

  • Hit and miss: The Edison cocktail tasted like a standard whiskey sour, and the Burbank Fries are plain

  • Service: Great, knowledgeable and attentive

  • Price: Entrées ran $23 to $25.50, and it felt a little high for what we got

  • Best for: The atmosphere and a drink-and-appetizer stop, rather than a full dinner
